Four aprons, 3 very excited kids and a kitchen about to become a complete mess. Then half an hour later a small pile of mini coconut cakes that need putting out of reach of very tempted tummies.
The recipe:
These can be made up as cookies or small cakes depending on your desired result. We made 24 mini cakes today.
- 200g Coconut Flour
- 75g Xylitol or unrefined sugar
- 50g cacao nibs or chopped nuts (optional)
- 1 tsp sweet spices (e.g. cinnamon or ginger)
- 5 eggs
Mix together the dry ingredients then whisk in the eggs to make a thick airy batter.
Spoon the batter into moulds
Bake in a moderate oven (170 deg C in my fan assisted oven) for 10-20 mins depending on mould size.

Looks good and the ingredients are easy to have on hand. I know some of my company would like them (I don't eat coconut--don't like the flavor). I bet your kitchen was just booming making these, this would be a good LO to post. Hugs.
