To make the filling put 1 soft turnip and 3 handfuls of cashew nuts into a blender (we use an Omni Blend) and process until smooth adding a little water as needed. I also added a pinch of ground sweet spices for a bit of extra flavour.
Cut the sweet peppers in half lengthways, remove the seeds, and spoon the filling on top.
Sprinkle with chopped nuts ready to serve.
